What Is Cocoa Powder?

Cocoa powder is made from fermenting, drying, roasting, and grinding cocoa beans, the seeds of the cocoa tree, to create cocoa mass; also known as cocoa liquor. This cocoa mass is pressed to separate cocoa butter and cocoa cake. The remaining cocoa cake is then ground into a fine dry powder. Cocoa powder is used across numerous applications to make chocolate-flavored foods and beverages such as confectionery, bakery, snacks, dairy, and culinary/savory foods.

What Are The Different Processing Types Of Cocoa Powders?

Lecithin doesn’t impact the color or flavor of the cocoa powder.
